
This is my baked mac n cheese recipe…well to be honest it was my grandmothers then my mothers then mine but once it got to me I changed a few things.
Ingredients
6 oz macaroni (about 1 1/2 cups)
3 Tablespoons butter or margarine
2 Tablespoons flour
1/2 teaspoon salt
2 cups milk (I use 1 cup of condensed (not sweetened) canned milk and 1 cupwater mixed together)
1 cup extra sharp cheddar
1 cup pepperjack or Monterey Jack if you don’t like jalapeno. You can also use 2cups of extra sharp cheddar if you like, instead of this kind of cheese.
1/2 cup of mozzarella or less
1 egg, beaten
Cook macaroni. This does not have to be cooked too thoroughly as it will continue to cook in the oven. Pour into a Pam sprayed (if you have it) dish; 2 quart round or 13 1/2” by 9” dish.
Over medium heat, melt butter/margarine. Blend in flour; add salt. When paste is formed, slowly add milk, pouring in a little at a time and stirring. Make sure that the heat is not so high that it is bubbling. You may need to turn it down a little. This process is not quick, but slow. This should thicken and form what is called a white cream sauce. Slowly add the cheese, making sure that it is almost melted before adding more. When all of the cheese is added and melted (it’s OK to have a few pieces that are left unmelted) add the beaten egg and stir until dissolved, pour over cooked macaroni. Baked uncovered at 350 degrees (pre-heated) about 45 minutes. If the top browns too quickly, cover with foil and uncover again about 15 minutes before ending.
